Non-alc naturally fermented sparkling tea, featuring single estate second flush Darjeeling tea, Hibiscus flowers and native Australian Lemongrass, known as Maarr.

Darjeeling is renowned as the ‘Champagne’ of teas, sourced from the picturesque Darjeeling region of India. Darjeeling second flush is known for its muscatel flavour.

The unique blend of second flush Darjeeling, Hibiscus and Maarr is the perfect balance of tart, fruit, floral and a spice.

A proprietary fermentation process that borrows techniques from wine making to achieve the desired complexity, flavour, body and mouthfeel.

Our fermentation process involves the introduction of a non-Saccharomyces yeast strain, and a prolonged 60 day fermentation designed to increase the ratio of gluconic acid, glycerol and elevate fruity esters.
