Non-alc naturally fermented sparkling tea, featuring Dragon Pearls, also known as Buddha Tears and Elderflower.  

Dragon Pearl is a specialty tea from Fujian Province of China where the fine art of scenting jasmine tea is practiced. The name comes from the appearance of the hand-rolled tea leaves, which resemble small pearls or tears.

Each bottle consists of the captivating fragrance of jasmine blossoms and elderflowers fresh, floral and fruity profile with notes reminiscent of pear and lychee.

A proprietary fermentation process that borrows techniques from wine making to achieve the desired complexity, flavour, body and mouthfeel.

Our fermentation process involves the introduction of a non-Saccharomyces yeast strain, and a prolonged 60 day fermentation designed to increase the ratio of gluconic acid, glycerol and elevate fruity esters.
